Chicken Inasal has become popular in Bacolod City, capital of Negros Occidental. Literally, inasal na manok means roasted chicken, inasal being derived from the Spanish word asar which means "to roast."
The ideal chicken inasal is marinated in a mixture made of vinegar, ginger, calamansi, lemongrass, and a dash of brown sugar. Your chicken inasal is best eaten with chicken oil and with a dipping sauce that's a mix of calamansi and soy sauce. This is one of Filipino's all time favorite, especially when visiting the city of smiles - Bacolod City.
